    Default curing meat

Anyone got any experience home curing country hams and pork middlings. Not many kill pork at home any more and seems like a lost art where most used to do their own. I see several videos on the net but it is not the way I remember granddaddy doing it. His ham and middling were pretty darn good too. Might try it will some wild hogs hams and side meat. Nice skill for just in case you ever need it.

There's a member on here that works wonders with his smoke house. Maybe he will chime in later.
